Dandelion flower honey 

Gather your dandelions on a lovely sunny day

Ingredients

Dandelion flowers

Water

Sugar

Method 

Combine equal quantities of sugar and water heat gently in a pan to help them combine and the sugar dissolve.

The green bit on the flowers is incredibly bitter so you want to remove the yellow petals with your fingers. add the petals to your sugary water and store in an airtight container for about three weeks.

Once infused you can remove the petals or leave them there which is what I do.

Then heat the liquid and reduce the water content so that it’s a more honey consistency.

And that’s it.
