3/4 of a jam jar of unripe green elderberries removed from the stem
White vinegar or cider vinegar
Pinch of salt
Method
Pop capers salt and vinegar into a pan and bring to the boil for around five minutes (this helps to infuse the vinegar and remove the toxic compounds from the elderberry)
Poor into a sterilised jar and leave for a few weeks before eating.
