This is one of the most commonly made things from foraged ingredients and it’s super simple to make.
Collect your flowers on a hot sunny day, this is when the flowers will produce the most pollen and will give a stronger elderflower flavour.
You want about 20 flower heads, I try to pick the larger ones so you get more flowers.
Give them a shake which gets all the bugs out.
Thinly slice oranges and lemons and pop in a bowl or a large pot with the flowers.
Make up a syrup which is equal quantities of sugar and water (1 kg to 1 litre is what i use)
Add the syrup to the fruit and flowers cover with a cloth or lid and leave for 24hrs
After 24hrs separate the liquid from the fruit and flower and bottle.
