When I first started my foraging journey I would get really excited that I found a thing for the first time, I take a handful home home, only to be stumped as what to do with it, I wanted to give the incredible ingredients the best chance to wow my friends and family, but I didn't know the best way to cook or preserve them, and I made many amazing discoveries but that was after a number of disgusting mistakes (which is probably why my husband is still a little dubious when I ask him to try things). On this course I will share with you my foraging foody journey and create with you some of the most epic recipes. 

Foraging isn't just about going for a walk and collecting edible plants and mushrooms, it's the end product that gives us the deep sense of satisfaction. Many ingredients from the wild wont make an exciting meal on their own ( I mean I probably could eat a whole plate of wild garlic)  but making it into a flat bread that's then dipped in wild garlic and nettle mayo, which is served along side freshly made nettle pasta, covered in a fresh wild green pesto, and a wild side salad... Now that is where the WOW comes in. I honestly could eat this dish every day of the year. 

This will be a small intimate group of no more than 8 people, we will enjoy a wild walk at the start of the day, and get to know some of the wild ingredients and collect a few bits ( although I will pick the bulk of the ingredients beforehand to maintain the sustainability of the site) which we will add to our cookery. After the walk we will have a wild snack to keep us going and then in pairs you will become a wild food chef, each event we will cook something different depending on what's in season and what the dietary requirements of the group are, cook an incredible meal and then enjoy our creation as a group

Our wild kitchen will also be in the wild no mod cons needed, we will be cooking outside (weather permitted) our in a classroom, to show that you don't need a fancy kitchen and all the gadgets to create some truly epic wild food.
